I'd say a quality stone is more important than the grit. Hard to go wrong with Norton, though.
Personally, I'd rather have a medium and a fine, rather than the coarse and medium that most grinders have. I don't usually remove a lot of material, but I want to be able to put a really nice edge on tools. As a result, I rarely use the coarse side, and sometimes have to hand finish my cutting edges.
